Bromelain, a natural anti-inflammatory

Bromelain refers to two proteolytic enzymes (i.e. proteins capable of breaking down other proteins into amino acids), found in Ananas comosus both in the fruit and in the stem, where it is found in higher concentrations.

In fact, the extraction of the active ingredient occurs mainly using the stem, which is not useful to the food industry and is therefore less expensive.
